I say never trust anything spelled with Z’s where there should be an S. It’s just good sense. So is this deliciously creamy Butternut Squash “Mac’n’cheese”. Just process steamed squash with Mori-Nu tofu & spices for super luscious (& healthy) cheesiness. I used quinoa shells since I’m trying to cut back on wheat for a bit. Topped with panko for some crunch. Paired with a lemon broccoli, cauliflower mix.
Mikey topped his with Sriracha (as he does 90% of his food!). Not really my thing but it certainly looks purdy.
