Portabello’s meaty texture make them an excellent substitute for beef here. Just chop ’em up & saute with onions & your favorite flavors. Then just pile on the taco toppings. I used tomato, spinach & lettuce and soy cheddar cheese. I try to use the ‘fake’ cheeses & other processed faux meat/dairy products very sparingly, maybe once or twice a month. Something about them doesn’t sit quite right with me. But, since shredded cheese just goes so perfectly on tacos, this is one of those occasions. And Mike begged. So that helped.
