This recipe also comes from the awesome Blissful Bites cookbook. The author has dubbed these “Magical Raw Tacos”. Hopefully, the magical bit gives you an idea of just how delicious they are. Romaine leaves make a excellent shell for diced cucumber, julienned carrots & avocado cubes. But the the real star of the show here (and it’s hard to be the star whenever avocado is in the picture) is the red pepper cashew spread. Just soak cashews for a few hours, then process with tamari, maple syrup, lemon, apple cider vinegar & a red bell pepper. Wow, magical indeed.
