I used Christy Morgan’s recipe from the amaze cookbook Blissful Bites – Pumpkin Spice Pancakes
Since I wanted to use real pumpkin and even the tiniest sugar pumpkin yields way more than the 1/3 cups recommended here (and since I didn’t have another immediate use in mind), I just tripled the recipe & saved the batter. It kept beautifully in the fridge for three days. For the pumpkin pie spice I mixed cinnamon, ginger, nutmeg & cloves.
Bonus with using fresh pumpkin, roasted pumpkin seeds! Happy Halloween kids!
